Boston Baked Beans |
|
| 2 c dried Pea beans, washed and drained | 6 c Water |
| 1 lb Salt Pork or Bacon | 1 Onion, chopped |
| 1 tsp Salt | 1/8 tsp Pepper |
| 1 c Molasses | 1 tsp Dry Mustard |
| 1 Garlic Clove, minced | 2 Tbl Brown Sugar |
Cover Beans with Water and boil for 5 minutes. Cover and let stand for 1 hour. Bring back to boil and simmer until tender adding more water if needed. Drain beans and reserve broth. In a Dutch Oven add remaining ingredients except salt pork. Mix gently with 2 cups of reserved broth, cover with salt pork or bacon. Preheat oven to 300 and cook for 5 hours removing lid during the last hour to thicken. *Note: to do this campfire style bury in hot coals for 3 hours. Uncover and bake 1/2 hour more. |
