Red Beans 'n Rice |
|
| 1/2 lb dried Red Beans, soaked in cold water overnight then drained | |
Your choice of: 1 smoked Ham Hock or 4 whole Hot Links or 1 Kielbasa Sausage sliced in 1/2 inch pieces |

| 2 Garlic Cloves, crushed | 1 medium Onion, chopped |
| 2 1/2 c Water | 1 Bay Leaf |
| 1/4 tsp your choice of Black or Red Pepper | 1/2 tsp dried Thyme |
| 1/2 tsp dried Basil | 1/4 tsp Oregano |
| 2 c Grated Cheddar Cheese, mild | 3 c White Rice , cooked |
Place drained beans in pot add garlic, onions, water, bay leaf, ham hock, kielbasa or hot links, herbs and pepper. Bring to a boil, reduce heat and simmer until beans are tender, adding more hot water as needed. Remove ham hock, strip meat from the bone and cut into chunks and return to pot. Discard bay leaf. Cook rice according to directions and spread on plate. Pour over Rice, topped with grated cheddar cheese and serve with your choice of hot sauce on the side. |
