Kentucky Derby Eggs |

| 8 slices of Bacon, fried crisp, drained on paper towels and crumbled. Reserve 2 Tbl of pan drippings. | |
| 1 c Frozen Kernel Corn, thawed | 2 c Mushrooms, sliced |
| 1/4 c diced Pimento | 1/2 c Bell Pepper, diced |
| 6 Eggs | Salt |
| 2 Tbl Butter or Margarine | 1/4 c Water |
| Shredded Cheddar Cheese | |
Beat Eggs with Water and set aside. In a medium skillet saute mushrooms and corn in bacon drippings. Add Bell Pepper. Pimento, half the crumbled Bacon and Salt to your taste. Cook until Bell Pepper is soft. Melt Butter in skillet with vegetables. Pour in Egg mixture and scramble to desired color. Serve on plates and sprinkle remaining Bacon and desired amount of Cheddar Cheese on top. Serve hot. |
