Prinkenauer Salat (Prinkenauer Potato & Apple Salad) Recipe dated 1912 |

| 4 - 6 Potato's, boiled and sliced | 1 Apple, finely diced |
| 1 Tbl Mustard | 2 Egg Yolks |
| 4 Tbl Oil | 4 Tbl Sour Cream |
| Salt, Pepper and a little Sugar to taste | 1 - 2 tsp Wine Vinegar |
Mix Potato's and apples, set aside. Mix mustard, oil, egg yolks and sour cream. Add salt, pepper and sugar and then vinegar. Add to potato, apple mixture and toss lightly to coat. Chill and serve. |
