Fried Day Chicken |

| 1 frying chicken, cut up | All Purpose Flour |
| 2 Eggs, beaten | Shortening or Lard |
| Salt, to taste | |
Slap a right smart chunk of shortening in a cast iron skillet and melt it. Once you get it good 'n hot turn down the flame and dip chicken parts in beaten egg, season with salt and roll in flour and fry the chicken slowly for about 20 minutes and turn over several times. Once it gets browned cover and simmer for another 20 minutes or until chicken is done. *Juices will run clear when poked with a fork. |
