Yankee Codfish Rarebit |

| 8 oz. Cod |
1 1/2 C. Milk |
| 1/4 C. Butter | Salt |
| 6 Tomato slices | 1 Egg, beaten |
| 3 Tbs. All Purpose Flour | 1/2 tsp. Dry Mustard |
| 1/2 tsp. Worcestershire Sauce | Dash Ground Red Pepper |
| 1 C. American Cheese, shredded | 3 English Muffins, split/toasted |
| Cover Cod with water and soak 12 hours in refrigerator, change water once. Drain well.
In a saucepan cover Cod with fresh cold water; bring to a boil, cover and reduce heat, simmer for fifteen minutes until flaky tender. Put English Muffins on plates to be served, top with Tomatoes and set aside. Drain and cut up fish. In a saucepan melt butter and stir in Flour, Mustard and Red Pepper. Add Milk and Worcestershire, cook and stir until thick and bubbly and then for another minute. In bowl with beaten Egg slowly stir in about 1/2 cup of hot mixture then return to pan. Stir in Cheese until melted. Add Cod and heat through. Pour over English Muffins and Tomato's, sprinkle with Parsley. Serve while hot. |
