Southern Fried Catfish |

| 2 lbs. skinless Catfish Fillets | 1/4 c Flour |
| 1/2 tsp Paprika | 1/2 tsp Salt |
| 1/8 tsp Pepper | 3 Tbl Bacon Drippings |
| Lemon Wedges | 2 Tbl Parsley, chopped |
Mix flour, paprika, salt and pepper. Roll fillets in flour mixture and coat thoroughly. heat bacon drippings in a heavy skillet, saute and brown fillets on both sides until fish flakes when forked. (about 10 minutes per inch of thickness of fish) When done sprinkle with parsley and serve with lemon wedges. |
