Shrimp Cakes |

| 1 lb. Fresh or 2 cups Canned Shrimp |
2 Tbl. Butter, soft |
| 3 slices white bread, crust removed | 1/8 tsp. Salt |
| 1/4 tsp. Black Pepper |
Hot Water |
| 1/4 tsp. Mace | |
| Preheat oven to 350.
Boil Fresh Shrimp in salted water until shells turn pink (about 15 minutes). Drain and cover with cold water to chill. Drain again and remove shells, legs and veins. If using canned shrimp rinse twice and remove veins. Chop or use food processor to mince Shrimp. Cut bread into 1 inch squares and cover with boiling water. Drain, squeeze dry and crumble. Add Shrimp and remaining ingredients, mix well. Shape into flat cakes and place in a shallow pan, bake for about 20 minutes, turning once to brown. Serve with either an egg or cheese sauce. |
