Prodigal Blueberry Streusel Cake |

| 2/3 cup shortening | 1 c. sugar | ||
| 2 t. grated lemon rind (*optional) | 2 eggs | ||
| 2 T. lemon juice | 3/4 cup milk | ||
| 1 t. salt | 3 c. flour | ||
| 2 t. baking powder | 2 cups berries | ||
| Blend sugar and shortening then add lemon and eggs. Blend in sifted dry ingredients alternately with milk. Then fold in berries. Spread in a greased and floured 9x13 pan. Pour topping on and bake for 30-35 minutes at 350 degrees. | |||
