Rafe's Pineapple Upside Down Cake |

| 1 - 8 1/2oz can Pineapple | 2 Eggs |
| 1 jar Maraschino/Cocktail Cherries | 2 tsp. Vanilla |
| 6 Tbl. Butter, melted | 2 cups Flour |
| 1 cup Brown Sugar | 1/2 tsp. Salt |
| 2 1/2 tsp. Baking Powder | 1 cup Sugar |
| 2/3 cup Shortening | |
Preheat oven to 350. Drain and reserve liquid from Pineapple. In measuring cup mix Brown Sugar with 2 Tbl. of Pineapple Juice, add enough Water to make 1 cup. Pour into pan. Arrange Pineapple and Cherries over Sugar mixture. Cream together Shortening and Sugar until light. Add Egg and Vanilla, beat until fluffy. Sift together dry ingredients and add to batter alternating with left over Pineapple Juice. Spread over Pineapple-Sugar mixture in pan. Bake 40 - 45 minutes. Cool 5 minutes and invert onto plate. Serve slightly warm. |
