Old Woman's Gingerbread Cake |

| 1 2/3 c Flour | 1/2 c Sugar |
| 1 1/4 tsp Baking Soda | 1/2 c Molasses |
| 1 1/2 tsp Ginger | 1/2 c Boiling Water |
| 3/4 tsp Cinnamon | 1/2 c Oil |
| 3/4 tsp Salt | 2/3 c Powdered Sugar |
| 1 Egg, lightly beaten | 3 Tbl Lemon Juice |
| Preheat oven to 350. Grease and flour a 9 inch square baking pan. Sift together flour, baking soda, ginger, cinnamon and salt. Add egg, sugar and molasses. Mix well. Pour boiling water and oil over the mixture, stirring until smooth. Pour batter into pan and bake 35 - 40 minutes, until top springs back when lightly touched and the edges have pulled away from the sides of the pan. Mix powdered sugar and lemon juice together and pour over hot cake. Cool in pan on a wire rack. | |
