Dad's Oatmeal Cake |

| 1 c Quick Oats | 1/2 c boiling Water |
| 1/2 c Cooking Oil | 1 c Brown Sugar |
| 1 c White Sugar | 2 Eggs |
| 1 1/2 c Flour | 1 tsp Baking Soda |
| 1 tsp Cinnamon | 1/2 tsp Salt |
| 1/4 tsp Nutmeg | 1 tsp Vanilla |
| 1/2 c chopped Nuts | |
Preheat oven to 350. Grease and flour 9 x 13 cake pan. Pour boiling water over oats. Let stand 15 - 20 minutes. Cream oil, sugars. Add eggs and vanilla, mix well. In a separate bowl combine flour, baking soda, cinnamon, salt and nutmeg. Add oat mixture. Mix well. Add nuts and sugar and egg mixture. Bake 30 minutes until done. Cool and top with Oatmeal Cake Topping. |
