L' il Red Heads Carrot Cake |

| 1 1/2 - 2 c Sugar | 1/2 c Walnuts, chopped |
| 1 1/2 c Oil | 4 Eggs, beaten |
| 2 c Self Rising Flour | 2 tsp Cinnamon |
| 1 tsp Vanilla | 2 - 3 c Fresh Carrots, grated |
Preheat oven to 350. Grease 3 cake pans and line with bakers paper. In a large bowl combine one at a time in this order: sugar, oil, eggs, flour, cinnamon, vanilla, carrots and nuts, mixing well after each addition. Pour into prepared pans and bake 30 - 35 minutes. Top with Cream Cheese Frosting using walnuts instead of pecans. |
