Ida's Blue Ribbon Cake |

1948 First Prize Winner at the Jay County Fair in Portland Indiana |

| 1 1/4 cups Flour, sifted | 1/2 cup Shortening |
| 1/2 cup Buttermilk | 1 tsp. Baking Soda |
| 1 cup + 1 Tbl. Sugar | 1/2 tsp. Vanilla Extract |
| 6 Tbl. Cocoa | 2 Eggs |
| 1/2 cup Water, boiling | |
Preheat oven to 350. Get out but do not grease 2 - 8 inch cake pans. Sift together Flour, Baking Soda and Cocoa, three times. In separate bowl cream Shortening and sugar until light and fluffy. With mixer at medium speed add Flour and Buttermilk alternately, mixing well each time. Add Vanilla. Add Water one third at a time. Beat well. Bake for 20 - 25 minutes. DO NOT make frosting until cake has cooled completely. |

| 1 tsp. Vanilla Extract | 1 cup Sugar |
| 1/4 tsp. Salt | 2 Egg Whites |
| 1/2 tsp. Cream of Tartar | |
In top of double boiler over simmering water combine all ingredients except Vanilla. Beat at top speed with an electric mixer 4 - 5 minutes. Remove from heat but keep over water and beat for one minute. Add Vanilla and blend. Spread over cooled cake. *Note: The success of this cake is credited to the long mixing times that insures fluffiness. |
