Ida's Blue Ribbon Cake
1948 First Prize Winner at the Jay County Fair in Portland Indiana
1 1/4 cups Flour, sifted 1/2 cup Shortening
1/2 cup Buttermilk 1 tsp. Baking Soda
1 cup + 1 Tbl. Sugar 1/2 tsp. Vanilla Extract
6 Tbl. Cocoa 2 Eggs
1/2 cup Water, boiling  
   

Preheat oven to 350.

Get out but do not grease 2 - 8 inch cake pans.

Sift together Flour, Baking Soda and Cocoa, three times.

In separate bowl cream Shortening and sugar until light and fluffy.
Add Eggs one at a time and beat for two minutes after each one.

With mixer at medium speed add Flour and Buttermilk alternately, mixing well each time.

Add Vanilla.

Add Water one third at a time.

Beat well.

Bake for 20 - 25 minutes.

DO NOT make frosting until cake has cooled completely.

   
Frosting
   
1 tsp. Vanilla Extract 1 cup Sugar
1/4 tsp. Salt 2 Egg Whites
1/2 tsp. Cream of Tartar  
   

In top of double boiler over simmering water combine all ingredients except Vanilla.

Beat at top speed with an electric mixer 4 - 5 minutes.

Remove from heat but keep over water and beat for one minute.

Add Vanilla and blend.

Spread over cooled cake.

*Note: The success of this cake is credited to the long mixing times that insures fluffiness.
