Veal & Rice Casserole |

4 small slices Fatback, diced |
1 can Tomato Paste or Soup |
1 cup White Rice, steamed |
4 cups Veal, cooked & diced |
1 large Onion, chopped |
2 Hard Boiled Eggs, sliced |
Salt & Pepper to taste |
2 Tbl. Butter |
1 cup Water |

Preheat oven to 350. Grease a baking dish. Fry Fatback and Onions until slightly browned. Add Veal, Salt and Pepper and Water. Heat through and pour into baking dish. Mix together Rice and Tomato product and pour over Veal mixture. Layer with sliced Eggs on top and dot with butter. Cover and bake 30 minutes. Check often to see if water needs to be added, mixture should be moist but not wet. |
