| Chicken Fried Steak | ||

| 2 lbs. Round Steak, 3/4 inch thick | Flour, Salt and Pepper | 4 Tbl Water |
Rub Steak liberally with Salt and Pepper. With a meat mallet pound in as much of the Flour as possible. Brown slowly on both sides in hot oil or fat. Add Water, cover and steam a few minutes to make fork tender. Remove to plate, smother with Cream Gravy. |

| 2 - 4 Tbl.. Pan Drippings from Steak | 2 - 4 Tbl Flour, Salt and Pepper |
2 - 4 cups Hot Milk |
Use equal amounts of Pan Drippings and Flour with 1 cup of Milk per Tablespoon of Flour. Over low heat slowly stir Flour into Pan Drippings until mixture resembles a smooth paste. Add Hot Milk a little at a time stirring well, mixture will become lumpy and smooth out as you add more milk. Turn heat up to medium. Cook and stir constantly until mixture reaches desired thickness. Remove from heat, Salt and Pepper to taste. Serve with Mashed Potato's and Seasoned Green Beans. |
