Raccoon Sloppy Joe
   
1 young 4 - 6 lb Raccoon, cut up in large pieces leave on the bone. 1 Onion, chopped
1 c Celery, chopped Salt & Pepper
Water 2 Onions, chopped
2 Tbl Butter 1 c BBQ Sauce
1 c Chili Sauce 8 Hamburger Buns
   

Cook raccoon with 1 onion, celery, salt, pepper and enough water to cover the meat.

Simmer until meat is tender.

Remove from bones and either cut up in very small pieces or put through a grinder.

In a skillet saute two onions and green pepper in butter until onion is clear but not browned.

Add BBQ sauce and chili sauce and heat through.

Serve on toasted hamburger buns.
