Raccoon Sloppy Joe |

| 1 young 4 - 6 lb Raccoon, cut up in large pieces leave on the bone. | 1 Onion, chopped |
| 1 c Celery, chopped | Salt & Pepper |
| Water | 2 Onions, chopped |
| 2 Tbl Butter | 1 c BBQ Sauce |
| 1 c Chili Sauce | 8 Hamburger Buns |
Cook raccoon with 1 onion, celery, salt, pepper and enough water to cover the meat. Simmer until meat is tender. Remove from bones and either cut up in very small pieces or put through a grinder. In a skillet saute two onions and green pepper in butter until onion is clear but not browned. Add BBQ sauce and chili sauce and heat through. Serve on toasted hamburger buns. |
