Ground Hog in Tomato Sauce
   
1 young Ground Hog cut into serving size pieces Water
1 c Vinegar Flour, salt and pepper, sifted together
3 Tbl Cooking Oil 1 Garlic Clove, minced
Pepper 2 c Tomato Sauce
1 tsp Basil  
   

Soak meat in vinegar and enough water to cover overnight.

Next day remove from water and drain on paper towels.

Roll meat in flour mixture.

Heat oil in heavy skillet and brown meat.

Add garlic and saute a few minutes.

Pepper to taste add tomato sauce and basil.

Cover and simmer 2 hours or until meat is tender.
