Fricasseed Squirrel |

| 4 Squirrels, cut into serving size pieces | 1 tsp Salt |
| Pepper | 1 c Flour |
| 4 slices Bacon, diced | 1 c Onion, sliced |
| 1 c Celery with leaves, chopped | 2 tsp Lemon Juice |
| 1 tsp Thyme | 1 c Beef Bullion |
Rub meat with salt and pepper and roll in flour. Fry meat with bacon pieces in a heavy skillet until brown on all sides. Add remaining ingredients, cover and simmer for 1 hour and all pieces are tender. Serve with hot rice using broth for sauce. |
