Bear Steak |

| 2 lbs Bear Steak, taken from a young bear that has not been feeding on garbage or flesh. | |
| 1 tsp Paprika | 1 tsp Dry Mustard |
| 2 Tbl A-1 or your choice Steak Sauce | Fresh Ground Pepper |
| 2 Tbl Butter | |
One hour before frying sprinkle steaks on both sides with paprika, dry mustard, steak sauce and pepper. Turn over once while marinating. Heat butter in a very hot cast iron skillet and fry steaks quickly. Meat should be crispy and brown on the outside and slightly rare in the middle. |
