Bear Steak
   
2 lbs Bear Steak, taken from a young bear that has not been feeding on garbage or flesh.
1 tsp Paprika 1 tsp Dry Mustard
2 Tbl A-1 or your choice Steak Sauce Fresh Ground Pepper
2 Tbl Butter  
   

One hour before frying sprinkle steaks on both sides with paprika, dry mustard, steak sauce and pepper. Turn over once while marinating.

Heat butter in a very hot cast iron skillet and fry steaks quickly.

Meat should be crispy and brown on the outside and slightly rare in the middle.
